Restaurants come and go in Vegas. Many are what I would call cookie cutter. Whether they are Italian, Steak, Chinese, or Mexican themed, you often know what the menu will contain before opening it.
But Nu Sanctuary is different. The menu choices are multicultural and high quality. The restaurant setting in Town Square is truly unique.
When you enter Nu (which means naked in French), you notice a large Salvador Dali-esque tree emerging from the center bar and spreading throughout the venue – from top to bottom. Translucent roots and branches wind around the area, under the dining tables and on the ceiling, The surreal setting makes your meal a sensory as well as culinary experience.
And then there is the food. Executive chef Brian Howard has produced a truly diverse menu that should appeal to both traditional and adventurous diners. When I dined at Nu Sanctuary shortly after its May 4 opening, I had the delicious pleasure of sampling a wide variety of menu selections.
The appetizers we were served illustrated the multi cultured menu. The pierogis were filled with creamy potatoes and topped with caviar. Our party sampled flavorful Thai chicken wings and beef carpaccio. My favorite appetizer was a skewer of yellow-fin tuna and watermelon bits. The red tuna along with the red watermelon was a visual as well as a taste delight.
The entrees were also quite diversified. “Spring Chicken” is one of the house specialties. The chicken is stuffed with taleggio cheese, wrapped in house-made prosciutto and served over a tomato-olive salad with a sauce of Sauvignon Blanc butter.
My favorite entrée was the meatballs and spaghetti. The meatballs, made from a blend of prime filet mignon, brisket and short ribs, were some of the best I have ever had. The desserts are varied. I particularly enjoyed the chocolate ravioli consisting of vanilla and mascarpone, white chocolate, frosted raspberry and toasted hazelnuts –WOW.
Nu Sanctuary also features a variety of fresh fruit hookahs and signature cocktails which can be enjoyed inside or on the open air patio.
The venue converts from dining to a club nightly at 11:00 PM. It is accompanied by a dramatic “transition” in a bold flash of light and sound accentuated by a video display on oversized screens. Service is also available on the quieter outdoor patio.

Thank you for the lovely review! I am an employee at NU and totally enjoy the people, food and atmosphere even when I’ m not working. It is very much a ‘one of a kind’ place and I hope more people find a ‘home’ there!
